  • 1 small onion - finely chopped
  • 1 tomato - finely chopped
  • 10g bunch of coriander - finely chopped
  • 1 green chilli (optional) - finely chopped (seeds removed if you prefer less heat)
  • 50g butter

Served on a slice of fried bread with bacon and a mushroom and most importantly a hot cup of Yorkshire Gold Tea. What a Sunday brunch that made. Definitely light supper tonight. Thanks for the recipe. Christopher

Had to improvise and use shallots instead of onion but what a gorgeous easy way to use up eggs in lockdown - very tasty!

What a brilliant recipe. I have been dieting for a while now and this is a perfect breakfast served with a paratha or a slice of toast. Tasty and satisfying what is not to like?

I cooked Parsee Scrambled Eggs for a Sunday Brunch for 1 and the result was the best ever. Served on a slice of ham on toast with a lovely proper home made coffee. The day was truly set up.
