Pasanda was originally cooked for the court of the Moghul emperors where the use of expensive, fragrant spices such as cardamon and cinnamon alongside more traditional Indian spices is a notable feature, as well as the use of other luxury ingredients such as nuts and dried fruit. We’re serving the curry with a rich, buttery mahkani dhal, some fantastic homemade garlic naans, a piquant ginger chutney and a pomegranate and cabbage salad. The naans - which are also flavoured with nigella seeds and coriander - are surprisingly easy to make and are way better than shop-bought ones!

  • 500g diced lamb
  • 2 medium onions
  • Fresh ginger
  • 2 cloves of garlic
  • ¼ white cabbage
  • 2 tomatoes
  • 10g bunch of coriander (optional)
  • ½ pomegranate - seeds only (or 100g ready-prepared seeds)
  • ½ lemon
  • 75g butter
  • 130ml milk (any type)
  • 200g natural yogurt (full fat is best)
  • 250g ready-cooked beluga or puy lentils
  • 300g plain flour (plus extra for rolling)
  • 2 tsp dried yeast (a standard-size sachet)
  • 45g sugar
  • 50g flaked almonds
  • 25g raisins or sultanas
  • Rice to serve

Made this for 2 friends last week and it went down exceptionally well I would have given it 5* except that we all found the ginger chutney a bit on the hot side compered to the rest of the meal. The rest was a triumph, the pasanda was rich and the cabbage salad a revelation. Clean plates all round, I will make Pasandas again.

This is probably the best box we have had so far. The curry was beautifully flavoured without being over hot, the ginger chutney added heat if you wanted it and the pomegranate and cabbage salad freshened everything up. The dahl was delicious and the naan bread was surprisingly easy to make. This is a recipe we will probably use again in the future.
