Originally from Punjab in North India but now enjoyed throughout the country, chole bhature is a dish frequently served as a substantial breakfast or snack. It consists of a simple chickpea (chole) curry served alongside fried breads known as bhature and raw onion. We’ve mixed the onion with radishes and tomatoes, turning it into a refreshing, crunchy salad and there’s also a tangy herb raita and sweet tamarind chutney on the side. For dessert we’ve got India’s version of fudge, pistachio barfi flavoured with heady green cardamon and a cup of sweet masala chai, tea brewed with spices and condensed milk.

  • 2 small red onions
  • 2 cloves of garlic
  • 200g radishes
  • 25g bunch of coriander
  • 1-2 green chillies (optional)
  • 2 tomatoes
  • 1 lemon
  • 2 x 400g tins of chickpeas
  • 200g natural yogurt (full fat is best)
  • 30g butter
  • 2 tea bags (any standard black tea is fine)
  • 397g condensed milk
  • 75g pistachio nuts
  • 1 tbsp tomato puree
  • 3 tbsp sugar
  • 250g self-raising flour (plus extra for rolling)
  • Oil for frying (sunflower or vegetable oil is best)

We really enjoyed this one. Everything was easy to make - including the bhature which were flaky. Loved the addition of the raita, salad and chutney which all worked a treat together.

Yum - this looks absolutely delicious, Rachel! Perfectly bubbly bhature, tangy tamarind chutney, and a pop of vibrant colour from the salad and those fiery green chillies! We're so pleased to hear that you loved the flavours and found it nice and simple to make too!
