‘Thali’ is the name of the metal tray on which a small selection of dishes (often vegetarian) are served. Widely available all over India, it’s a great way of trying a range of flavours and textures from curries and dhals to pickles, chutneys and fried snacks. Here we’ve got a version from Punjab in the north of India where the food is richer with dairy than the south, and full of hearty vegetables. The paneer dish is cooked with lots of methi (fenugreek leaf) which gives it a distinctive ‘curry’ aroma. We’ve also got a root vegetable subji, buttery makhani dhal, crispy breads known as pooris, pilau rice, lemon raita and finally a deliciously hot chilli and garlic chutney!

  • 1 onion
  • 8 cloves of garlic
  • Fresh ginger
  • 2 large carrots or parsnips
  • 400g spinach (fresh or frozen)
  • 6 tomatoes
  • 1 lemon
  • 300g natural yogurt (full fat is best)
  • 50g butter
  • 250g ready-cooked beluga or puy lentils
  • 160g self-raising flour
  • 300g basmati or standard long grain rice
  • 1 tsp sugar
  • Oil for frying (sunflower or vegetable oil is best)

I've never had paneer before, so this felt experimental. The recipe didn't disappoint though. The curry was tasty enough on its own, but was lifted even further by the lemon raita and chilli chutney. I was a bit disappointed with the dhal, which was a bit lacking in flavour but that could have been entirely my fault.
