Reshmi Kebabs with Fruit Chaat Salad:
Reshmi kebabs are a dish of Moghul origin whose Persian-inspired cuisine was intricate and expensive to prepare. This was due in part to their use of costly ingredients such as meat, cream, nuts and spices. The kebabs are now eaten throughout Northern India and Pakistan which is where we get the inspiration for the rest of the side dishes: dum aloo - a potato dish flavoured with tangy tamarind - and a fruity chaat salad.
Sri Lankan Kottu Roti with Lunu Miris:
Kottu translates from Sinhalese as chopped, and this hugely popular Sri Lankan street food consists of chopped up roti (a type of flatbread), stir-fried with chicken, vegetables and egg. It’s typically cooked on a heated iron sheet using two blunt blades to mix and chop - a distinctive sound which can be heard everywhere in Sri Lanka!
