Reshmi kebabs are a dish of Moghul origin whose Persian-inspired cuisine was intricate and expensive to prepare. This was due in part to their use of costly ingredients such as meat, cream, nuts and spices. The kebabs are now eaten throughout northern India and Pakistan which is where we get the inspiration for the rest of the side dishes - dum aloo, a potato dish flavoured with tangy tamarind, a fruity chaat salad and sweet tomato chutney. Homemade sunshine yellow, buttery saffron parathas complete this colourful and flavoursome spread.

Reshmi Kebab Spices: cumin, coriander, black cardamon, black pepper, green cardamon, ginger, cinnamon, cloves, mace, bay, nutmeg, coriander leaf, fenugreek leaf, green chilli

Saffron Blend: saffron, turmeric

Chaat Masala: amchur, salt, chilli, cumin, black pepper, coriander, ginger, ajowan, mint, asafoetida

Dum Aloo Seeds: cumin, brown MUSTARD, fenugreek, black cumin

Dum Aloo Ground Spices: tamarind (tamarind, cornstarch), amchur, cumin, turmeric, Kashmiri chilli, asafoetida

Kashmiri Chillies: Kashmiri chilli

Chutney Seeds: garlic, brown MUSTARD, nigella, cumin

Shopping List
  • 500g diced chicken (thighs are best)
  • 750g baby new potatoes
  • 1 medium onion
  • ½ cucumber
  • Fresh ginger
  • 4 tomatoes
  • ½ small pineapple (or 200g ready-prepared) 
  • 25g bunch of coriander
  • 1 lime
  • 25g ground almonds
  • 50ml cream (any type)
  • 50g butter
  • 250g plain flour (plus extra for rolling)
  • 35g sugar
  • 1 tbsp vinegar (white wine or cider vinegar is best)

The flavours in this meal left us wanting more! Easy to prepare, though the parathas are a bit fiddly. The portion size was spot on. I think the prep time (30 minutes) and cook time (1 hour 5 minutes) should be swapped.

My first experience of The Spicery and was amazed at quite how good the meal was. Really enjoyed cooking it and Sarah and I said it was possibly one of the best meals I had ever cooked. Really looking forward to next months installment!!

It took me quite a long time, only because I wanted to get it right, it being my first. In fact the recipes are easy to follow, and the ingredients to buy are easy to obtain, making the whole experience a pleasure. I forgot to buy skewers, so grilled the chicken as it was, a mistake that I will not make again, as it boiled it, sitting in the juices, I think it would have been better cooked in a frying pan. All in all a great experience, and I'm looking forward to receiving my next box. Thank you very much.

Probably one of my favourite so far! LOVED the parathas but not too fuss about the potato salad. The bread with the salad and the kebabs were enough with the lovely sweet chutney!
