Root Veg Dopiaza with Saag Paneer and Pilau Rice

  • 500g mixture of root veg (eg parsnips, carrots, beetroot, sweet potatoes etc)
  • 250g new or baby potatoes
  • 200g spinach (fresh or frozen)
  • 3 medium onions

  • 1 tbsp fresh ginger

  • 226g paneer cheese
  • 50g butter
  • 150g natural yogurt (full fat is best)
  • 1 tbsp tomato puree
  • 1 tbsp vinegar (white wine or cider vinegar is best)

  • 300g basmati or long grain rice
