Shahi Lamb Curry with Aloo Pilau and Aubergine Pickle
A rich and satisfying lamb curry with summer veg sides...
SERVES: 4
Shahi roughly translates as royal or imperial and the word is often used as an umbrella term for dishes that originated in Moghul times such as pasanda or korma. This rich lamb curry is typically Moghul in style with the use of opulent ingredients such as cashew nuts, butter and lamb which make it worthy of the royal courts. It’s a luxuriously indulgent dish and the smoother you manage to blend your paste, the creamier your resulting sauce will be. The curry is served with a selection of dishes that celebrate summer vegetables - an aloo pilau made with new potatoes, summer veg subji and a fiery aubergine pickle.

So yummy. Great main curry the blended cashew nuts made it exciting and added great texture! The whole meal worked brilliantly together! Only improvements would be to have slightly less rice and potatoes then the recipe said to allow the amazing spices to be more poignant.

Fabulous
Wow this luxurious and indulgent dish really does look fab! We're loving the yellow pilau and blue crockery- the perfect pops of colour for Spring!
Delicious through and through, we avoided using radishes (I really don’t like) but the aubergine pickle was fabulous, the lamb mouthwatering and the aloo pilau really good, got some leftover pickle and aloo pilau - yum
Ah, LOVE-ly! Happy spicing!
