Chunks of meat or veg are marinated with spices, onion and garlic then grilled until crispy around the edges and juicy inside. The key is to remove any excess marinade before grilling the kebabs so they char and caramelise rather than stew.

Chunks of meat or veg are marinated with spices, onion and garlic then grilled until crispy around the edges and juicy inside. SHISH KEBAB BLEND (1 portion = 2 tbsp): cumin, paprika, Urfa chilli, mild chilli flakes, sumac, fenugreek, red bell pepper, coriander, chilli, mint, brown MUSTARD, parsley

Shish Kebab Recipe:

PREP 10 mins
COOK 50 mins
HEAT 3
Serves 4

You Need:

500g diced lamb or chicken or use halloumi, courgette or peppers for a veg/vegan version
½ onion - roughly chopped
1 clove of garlic - roughly chopped
2 tbsp tomato puree
1 tbsp vinegar (white wine or cider vinegar is best)
Pitta bread, salad and yogurt to serve
1 portion of SHISH KEBAB BLEND

Method:

Blend the onion with the garlic, tomato puree, vinegar, 2 tbsp oil, ½ tsp salt, SHISH KEBAB BLEND and 100ml water to a smoothish paste then stir in the lamb. Leave to marinate for at least 30 minutes
Preheat the grill now
Thread the lamb onto 4 skewers, squeezing out any excess marinade
Lay the skewers on a rack so the kebabs aren’t sitting directly on the tray, then grill for 15 minutes (as close as possible to the heat source), turning regularly, or until the edges are charred and the lamb is cooked through
Serve with the pitta bread, salad and yogurt

Packaging format:
