Sonoran Hot Dogs with Fries, Salsas and Pickled Red Cabbage
These moreish hot dogs wrapped in bacon and served with a range of salsas and condiments are said to have originated in Sonora, Mexico where they were eaten at baseball games. Their popularity has taken them across the border to the US, with Tucson, Arizona having 200 vendors of the tasty snack! We’ve really gone to town with the array of toppings here - there’s something for everyone including American mustard, a tangy chopped onion and coriander salsa, smoky chipotle salsa, pinto beans and guacamole. Homemade seeded hot dog buns, seasoned fries and pickled red cabbage complete this sumptuous feast!

- 4 large hot dogs
- 8 rashers of bacon (any type)
- ½ small red cabbage
- 1 medium onion
- 3 tomatoes
- 2 avocados
- 1 lime
- 25g bunch of coriander
- Sour cream or mayonnaise to serve
- 1 egg (any size)
- 65ml vinegar (white wine or cider vinegar is best)
- 30g sugar
- 300g bread flour
- 1 tsp cornflour (or just use bread flour)
- 2 tsp dried yeast (a standard-size sachet)
- 400g tin of pinto, borlotti or kidney beans
- 200ml lager, beer or just use tap water
- 800g oven chips (French fries are best) or make your own

Celebrating Hogmanay by cooking a great gift from fab friends. The kids loved the spices and this was a definite hit! Making the hot dog rolls from scratch made this an extra special meal!
