Spring Rolls ~ Curry Laksa
The mouth-watering flavours of street food from Malaysia...
SERVES: 4
Everywhere you go in Malaysia there are numerous hawker centres and food stalls with tasty offerings, whether a quick snack or full blown meal. This month we're sampling two of these popular dishes. To begin we’ve got spring rolls (or popiah) - tasty seasoned veg inside a crispy casing served with a sweet tamarind soy dipping sauce. Next up curry laksa, a popular dish throughout Singapore and Malaysia which represents the diversity of the population there. It’s everything you need in one bowl - noodles, veg and tofu covered in a mildly spiced coconut broth.

Subtle flavours and a relaxing cook on this one.
Lovely balance of flavours enjoyed by us all. Plenty for 4 people. Nice level of spice.
This looks great, Rebecca - we're so happy to hear how much you all enjoyed it!
Totally new recipe for me. The result was light and delicious. The coconut milk made a lovely sweet broth for the prawns and the spices gave it a background heat that was striking without being tongue burning. I shall definitely make it again
This looks like a delicious laksa, Trudie - we're so pleased to hear how much you enjoyed this dish!
