To begin, we’ve got spring rolls (or popiah) - tasty seasoned veg inside a crispy filo pastry casing, served with a sweet tamarind soy dipping sauce. Next up, curry laksa - a popular dish throughout Singapore and Malaysia which represents the diversity of the population there. A fragrant paste is first fried to deepen the flavour, then liquid is added to create a mildly-spiced coconut broth - the addition of noodles, veg and tofu makes this a really hearty and aromatic dish.

  • 396g block of tofu (smoked tofu is best)
  • 200g shallots or 1 large red onion
  • 2 cloves of garlic
  • Fresh ginger
  • 2 lemongrass stalks
  • 250g mushrooms (any type)
  • 300g beansprouts
  • 2 medium carrots
  • ½ cucumber (optional)
  • 10g bunch of mint and/or coriander
  • 2 limes
  • 8 sheets of filo pastry or fresh spring roll wrappers
  • 2 eggs (any size)
  • 400ml full fat coconut milk
  • 45ml soy sauce (any type)
  • 75g sugar
  • Cornflour or plain flour for dusting
  • Dried noodles for 4 (any type)
  • Oil for frying (sunflower or vegetable oil is best)

Totally new recipe for me. The result was light and delicious. The coconut milk made a lovely sweet broth for the prawns and the spices gave it a background heat that was striking without being tongue burning. I shall definitely make it again
