In Mexico, pumpkins and squash are one of the most prized ingredients and the Mexicans use every part of the plant from the flesh to the flowers (floras) and seeds (pepitas). Adding a handful of toasted pumpkin seeds to serve really elevates this dish and adds a delicious crunch.
