Here we have a Yorkshire pudding-style hopper (a Sri Lankan pancake) turned bright gold with the addition of turmeric and topped with beef smore - the Sri Lankan version of pot roast beef - plus a delicious coconut dhal. Cinnamon and mustard seeds are two spices that are key to the cooking of Sri Lanka and both appear in the rich gravy the beef is cooked in.

On the side are a few Sri Lankan staples - mallung (shredded greens, stir-fried with mustard seeds, chilli, turmeric and cumin), a refreshing coconut chutney and a traditional chilli sauce known as lunu miris.

BEEF GROUND SPICES: Coriander, cumin, fennel, fenugreek, mustard, chilli, cinnamon, black cardamon, black pepper, lemongrass
BEEF WHOLE SPICES: Green cardamon, brown mustard, cinnamon, lemongrass, curry leaves
MALLUNG SPICES: Black pepper, brown mustard, cumin, chilli
YORKSHIRE HOPPER SPICES: Turmeric, brown mustard, curry leaves
LUNU MIRIS SPICES: Shrimp powder (shrimp, salt), chilli
DHAL SPICES: Cumin, brown mustard, turmeric, fenugreek
COCONUT CHUTNEY BLEND: Mint, green cardamon, coriander leaf

Shopping List
  • 600g diced beef shin, cheek, ribs, or use standard diced beef
  • 2 large red onions
  • Fresh ginger - roughly chopped to make 1 tbsp
  • 2 cloves of garlic
  • 1 bunch of greens (about 200g)
  • 10g bunch of coriander
  • 1 lime
  • 3 eggs (any size)
  • 100g red lentils
  • 400ml full fat coconut milk
  • 30g desiccated coconut
  • 100g plain flour
  • Pinch of sugar

I got this for my hubby as he loves beef, I am veggie and was able to use veggie steak pieces for the recipe with huge success, Yorkshire pud ....in fact all of it was amazing! Will be having again!!

This was an incredible combination of texture and taste. Brilliantly spiced to be tingly but not painful and real fun to make. One of the best we've had in two years of being in the club!
