Sri Lankan Wambatu Curry with Coconut Sambol
Description | Sri Lanka is known for the fragrance and colour of its cuisine, with the key spices including cinnamon, mustard, curry leaves and plenty of chilli. Coconuts grow abundantly on this tropical island - no Sri Lankan meal would be complete without their addition! Here we’ve got a rich aubergine (wambatu in Tamil) and potato curry served with a red lentil dhal made with coconut. For a bit of tang we have a mango and tamarind curry on the side as well as 2 condiments which in Sri Lanka are known as sambols - the 1st is a mild coconut sambol flavoured with green chilli, tomato and onion, and the 2nd a sweet onion and chilli relish known as seeni sambol. |
