Taco Legend Gazpacho
This recipe is based on Seville-style gazpacho, made with tomato, cucumber and onion. Our Taco Legend version here uses lime juice instead of sherry vinegar, chillies (as well as peppers) for a bit of a kick, and is finished with a drizzle of CHIPOTLE olive oil and chopped avocado for a delicious Spanish/Mexican combination!
Also works a treat with: 100g chopped radishes instead of avocado
Goes great with: A BBQ lunch on a hot summer’s day as a starter
