Tandoori Chicken Pilau
Here two favourites of the curry house merge to make a delicious centre piece for your dining table! Tandoori is one of the simplest and best known Indian dishes - the familiar bright red colour of tandoori is often achieved by using food colouring but here the spiced yogurt marinade contains lots of vibrant Kashmiri chilli powder for a more natural colour and fantastic depth of flavour. The chicken is served on top of a buttery, fragrant pilau rice and crispy onions, with a simple salad and green chutney on the side.

The flavours of Morocco are a fine balance of sweetness and fragrant spices - including allspice, cinnamon, cardamon and saffron - which produces a refined cuisine that’s famous the world over. Here we've got lamb and vegetable pastries known as briouats served with a fava bean salad flavoured with cumin and mint, saffron couscous and a spicy rose petal harissa.

  • 1 large red onion
  • 2 tomatoes
  • 25g bunch of coriander
  • 1 lemon
  • 150g natural yogurt (full fat is best)
  • 15g butter
  • 150g basmati or standard long grain rice (not easy cook)
  • 25g raisins or sultanas
  • 10g sugar

Moroccan Briouats with Fava Bean Salad

  • 125g lamb mince
  • 1 small onion
  • 200g broad beans (fresh or frozen)
  • ½ lemon
  • 4 sheets of filo pastry
  • 25g flaked almonds
  • 200g couscous
  • 120ml good quality olive oil

I found this recipe a little disappointing. I made the Briouats as per the recipe, but found them to be rather big and difficult to cut into. I feel that you only need 2 sheets of filo pastry (not 4) cut to a smaller size and filled with less filling. I have always loved your recipes in the past.
