Texan chilli is known as 'bowl o' red', and there are fierce debates about the key ingredients - tomato is a definite no, and even beans are controversial (although we think they make this rich, sweet and smoky dish even more delicious!).

4 rashers smoked bacon
1 red onion
3 cloves of garlic
3 red chillies
2 tbsp sugar (dark brown is best)
2 tbsp vinegar (white wine or cider vinegar is best)
