Massaman curry contains a huge variety of different spices but, like most food in Thailand, it has a lovely balance so that nothing overwhelms. It’s an unusual curry by Thai standards as it uses several dried spices in addition to the traditional fragrant Thai ingredients of lime leaves, lemongrass and galangal. It’s served here with son-in-law eggs (a dish of fried hard-boiled eggs dressed with tangy tamarind sauce, fried shallots and fresh coriander), a hot chilli relish, stir-fried vegetables, a refreshing cucumber salad and plain rice.
