Massaman curry contains a huge variety of different spices but, like most food in Thailand, it has a lovely balance so that nothing overwhelms. It’s an unusual curry by Thai standards as it uses several dried spices in addition to the traditional fragrant Thai ingredients of lime leaves, lemongrass and galangal. It’s served here with son-in-law eggs (a dish of fried hard-boiled eggs dressed with tangy tamarind sauce, fried shallots and fresh coriander), a hot chilli relish, stir-fried vegetables, a refreshing cucumber salad and plain rice.

  • 500g diced beef
  • 500g new potatoes
  • 4 pak choi or 1 Chinese leaf cabbage
  • 400g shallots or 2 large red onions
  • 4 cloves of garlic
  • Fresh ginger
  • 1 red chilli
  • 10g bunch of coriander
  • 1 cucumber
  • 2 limes
  • 4 eggs (any size)
  • 400ml full fat coconut milk
  • 70g peanuts
  • 60ml fish or soy sauce (any type)
  • 50g sugar
  • Oil for frying (sunflower or vegetable oil is best)
  • Rice for 4 to serve

Everything was very tasty, but it took a very long time to cook everything!

We're pleased to hear that you enjoyed this meal, but sorry if you found it a bit laborious to cook. Our spiceboxes can be a bit time-consuming (and deep-frying is always a bit of a faff!), but they are intended to be a real event to both cook and eat, and we hope the meal tasted even more enjoyable knowing how much work you'd put into it!
