  • 500g cherry tomatoes
  • 1 large onion - finely chopped
  • 2 cloves of garlic - finely chopped
  • Fresh ginger - finely chopped to make 1 tbsp
  • 1 red chilli - finely chopped (seeds removed if you’d prefer less heat)

We had a mountain of cherry tomatoes in the greenhouse and decided to try this curry. We wanted to eat it as a main course so amended the recipe by adding some cashew nuts, and it was delicious. Thank you for the inspiration!

This looks amazing, Rob! And I bet it tasted all the more delicious knowing that you'd grown the tomatoes yourself. Great job with this one!
