Trini Geera Pork Roti with Apple Chow and Hot Sauce
This month we've got flatbreads known as roti which are Indian in origin and are served in various forms (Trini doubles, dhalpuri and buss up shut) across Trinidad as filling snacks. We're serving geera pork inside ours - this popular dish features bite-sized pieces of pork and plenty of very darkly roasted ground cumin (geera) - a seasoning that’s unique to Trinidadian cooking. A long slow simmer really allows the flavours to penetrate the meat, producing perfectly tender spiced pork. Seasoned chips, coleslaw, hot sauce, tamarind sauce and a zingy apple and cucumber chow complete this delicious meal.
