Trinidad Chicken Curry:
Colonial rule and immigration have left Trinidad with an incredibly diverse ethnic population. This is reflected in the food, as seen in this recipe: parsley and thyme are European, allspice and habanero chilli are Central American, the caramelised chicken is a distinctively Caribbean way of cooking, and the heavily cumin-scented amchar masala sprinkled in at the end is uniquely West Indian. It makes a delicious and rich curry and is served here with a fruity apple chow and the quintessential Caribbean hot pepper sauce.

Turkish Lahmacun:
Lahmacun, the Turkish equivalent of pizza, is a popular takeaway snack consisting of a yeasted dough rolled thinly and then topped with a mixture of spiced lamb, tomato and red pepper. After baking in a very hot oven, they’re sprinkled with Aleppo pepper, mint and sumac, topped with fresh parsley, sliced tomato and a squeeze of lemon juice and then rolled up and enjoyed immediately.

Shopping List

Trinidad Chicken Curry:

  • 4 chicken thighs or drumsticks on the bone (skin removed if you prefer) or sweet potatoes cut into large bite-size pieces for a veg/vegan version
  • 1 bunch of spring onions
  • 2 cloves of garlic
  • 250g new potatoes
  • ½ cucumber
  • 10g bunch of coriander
  • 1 eating apple
  • 1 lime
  • 2 tsp sugar (dark brown is best)
  • 2 tbsp tomato puree
  • Rice to serve

Turkish Lahmacun:

  • 125g lamb or beef mince or soy mince for a veg/vegan version
  • 1 small red onion
  • 4 tomatoes
  • 25g bunch of parsley
  • 1 lemon
  • 200g strong white bread flour, plus extra for rolling
  • 1 tsp honey or sugar
  • 1 tsp dried yeast (½ a standard-size sachet)
