  • 500g sweet potatoes
  • 200g spring greens
  • 1 onion
  • 4 cloves of garlic
  • 6 tomatoes
  • 1 yellow pepper
  • 25g bunch of coriander
  • 1 medium unripe mango (or 200g ready-prepared)
  • 2 limes
  • 2 x 400g tins of chickpeas
  • 150g gram (chickpea) flour or plain flour
  • ½ tsp baking powder
  • 3 tbsp sugar
  • Oil for frying (sunflower or vegetable oil is best)
  • Rice to serve

Super colourful! Gave 4 as am afraid the pepper sauce was just too hot for me! Accompanied by the refreshing free sample, sumac lemonade

This looks like an amazing and beautifully vibrant spread, Iain - great job! Sorry to hear that the pepper sauce was a little too fiery for you, but hopefully the sumac lemonade did a good job of cooling your mouth down!
