The streets of Istanbul are lined with an array of exciting foodstuffs, the heartiest of which is kumpir, the beloved Turkish baked potato. Gigantic potatoes are baked in a wood-fired oven until crispy and then the kumpir-maestro slices the potato in half, adds a generous amount of butter and cheese and theatrically whips everything together with a knife. This mesmerising process takes a few minutes until the ingredients are well and truly combined, giving you plenty of time to decide on your toppings! As well as the traditional cheese, pickled cabbage and biber salcasi (pepper paste), here we’ve got kofta baked beans, garlic yogurt sauce and a refreshing parsley and sumac salad.

  • 500g lamb or beef mince
  • 4 large baking potatoes (preferably at least 300g each)
  • ½ white or red cabbage
  • 2 red onions
  • 4 cloves of garlic
  • 25g bunch of parsley
  • 1 lemon
  • 60g butter
  • 150g cheddar cheese
  • 150g natural yogurt (full fat is best)
  • 30g breadcrumbs
  • 2 x 400g tins of cannellini beans
  • 400g tin of tomatoes
  • 50ml vinegar (white wine or cider vinegar is best)
  • 40g sugar

A fantastic mix of flavours and textures. A very messy, tasty dinner, made me want to head off to Istanbul

It's so often the messiest dishes that are the tastiest! We hope you get to go to Istanbul one day and sample Kumpir!
