Turkish Kumpir with Kofta Baked Beans
|The streets of Istanbul are lined with an array of exciting foodstuffs, the heartiest of which is kumpir, the beloved Turkish baked potato. Gigantic potatoes are baked in a wood-fired oven until crispy and then the kumpir-maestro slices the potato in half, adds a generous amount of butter and cheese and theatrically whips everything together with a knife. This mesmerising process takes a few minutes until the ingredients are well and truly combined, giving you plenty of time to decide on your toppings! As well as the traditional cheese, pickled cabbage and biber salcasi (pepper paste), here we’ve got kofta baked beans, garlic yogurt sauce and a refreshing parsley and sumac salad.

Ground Spices: cumin, cinnamon, allspice, oregano, red bell pepper, black pepper
Kofta Spices: Urfa chilli, black pepper, cumin, parsley, smoked paprika, allspice, cinnamon, mint, garlic, oil, salt
