Urfa Kebab Spices
Some of the world's best kebabs come from Turkey, and there's a huge range to choose from. These urfa kebabs are made from minced meat seasoned heavily with urfa chilli flakes and hand moulded into flattened sausage shapes. The chilli flakes are dark and purplish in colour with a rich, smoky flavour and just a hint of heat - they’re totally different to standard chilli flakes, much softer and more delicate.

Ingredients:
- 500g lamb or beef mince
- 1 small red onion - coarsely grated
- Pitta breads, salad and yogurt to serve
- 1 portion of URFA KEBAB SPICES (1 portion = 2 tbsp): Urfa chilli, black pepper, cumin, parsley, smoked paprika, allspice, cinnamon, mint, garlic May contain traces of celery, mustard and sesame
- Preheat the grill or light the BBQ now
- Mix the mince with the onion, URFA KEBAB SPICES and ¾ tsp salt until thoroughly combined, then form the mixture into 4 flat sausage shapes
- Grill the kebabs for 5 minutes on each side or until charred around the edges and just cooked through
- Toast the pitta breads now
- Serve the kebabs with the pitta breads, salad and yogurt on the side
Please not if you're making a bigger batch, you'll need to scale up the fresh ingredients in proportion, but the spices only by ⅔ or it will be too intense!
