Description

Shab Deg is a simple stew from Kashmir, northern India, in which lamb kofta (meatballs) are baked in a thick sauce with diced lamb and winter veg. It’s a great way to use up any root veg, which combines with the richness of the yogurt and the mild flavours of the spices to make a really delicious and satisfying meal!

Shopping List
  • 400g diced lamb or use mushrooms (any type) cut into bite-size pieces for a veg version
  • 250g lamb mince or use veggie meatballs for a veg version
  • 500g mixture of winter root veg (e.g. turnips, carrots, potatoes etc)
  • 1 large onion
  • 2 cloves of garlic
  • 10g bunch of coriander
  • 2 tbsp tomato puree
  • 150g natural yogurt (full fat is best)
  • 2 tbsp plain flour

  • Large lidded ovenproof dish

Made with beef instead of lamb. A lovely one pot, warming winter stew. The yogurt marinade made the meat lovely and tender. Would serve with green veg next time

I’m no cook. Wanted to impress my gf - actually went to the village butcher for the proper meat - found the recipe easy to follow, and the results were outstanding. Really nice, comforting, yummy food. And yes, she was impressed :-)
