These noodles are in fact a Cantonese creation, popular in Hong Kong tea houses and now a favourite in Chinese takeaways in the UK.

They’re a fantastic jumble of noodles, prawns, pork, peppers, beansprouts and egg all flavoured with Indian curry powder. Prepping your ingredients is the key to stir-fry success!

Shopping List
  • 250g pork (any type) - very thinly sliced
  • 150g cooked prawns (any type) - defrosted if frozen
  • 1 red pepper - deseeded and thinly sliced
  • 1 bunch of spring onions - thinly sliced, including the green tops
  • Fresh ginger - finely chopped to make 1 tbsp
  • 2 cloves of garlic - finely chopped
  • 1-2 red chillies - thinly sliced (seeds removed if you prefer less heat)
  • 200g beansprouts
  • 2 eggs (any size) - beaten with a pinch of salt
  • 4 x 150g ready cooked rice vermicelli noodles or 200g dried noodles, soaked and rinsed
  • 4 tbsp soy sauce (any type) plus extra to serve
  • 2 tbsp honey or brown sugar
  • 1 tbsp vinegar (rice, white wine or cider vinegar is best)

We decided to have some Okra cooked your way and they were delicious especially alongside the Singapore Noodles with the amazing honey-soy-vinegar sauce. What a lovely meal for a wet Sunday evening.
