Christmas is all about tradition, right? But sometimes tradition can get a little bit dull so here at The Spicery we’ve carefully put together a much more exciting seasonal feast, containing all the usual elements of the traditional Christmas lunch but with an Indian overhaul. To begin, there’s a jazzed up prawn cocktail served with poppadoms and a marie rose raita. Next on the menu is a stunning centrepiece of tandoori turkey with crispy masala potatoes, balti gravy and cranberry chutney. Finally, after a nap on the sofa and the Queen’s speech, for dessert we’ve got Grandma’s favourite, a (boozy) trifle flavoured with cardamon and saffron, and topped with fragrant rose petals.

  • 2kg turkey crown or whole chicken
  • 400g cooked, peeled prawns (any type)
  • 1kg baby potatoes
  • Mixed veg to serve with the main
  • 1 iceberg lettuce
  • 2 lemons
  • 1 medium mango (or 200g ready-prepared)
  • 60g butter
  • 150ml double or whipping cream
  • 350g natural yogurt (full fat is best)
  • 400g tin of custard
  • 45g tomato ketchup
  • 250g cranberry sauce
  • 1 chicken stock cube
  • 60g sugar
  • 2 tbsp plain flour
  • 100g sponge fingers or thinly sliced sponge cake
