Baja California in the north of Mexico has over 1900 miles of coastline and is famed for its beaches and seafood. This crispy battered fish is a favourite in the area and goes particularly well with an ice cold margarita or beer!

400g firm-fleshed fish fillets
175g plain flour plus extra for coating the fish
250ml lager, beer, carbonated water or just use cold tap water
Oil for frying (sunflower or vegetable oil is best)
