Both Eastern and Western influences can be tasted in Lebanese cuisine, whose focus is on fresh ingredients and the generous use of herbs and spices. Here we’re grilling up a Lebanese favourite, kafta (kebabs), seasoned with rich and earthy Urfa chilli. We’ve also got chicken skewers flavoured with Lebanese 7 spice, also known as baharat, served with fattoush - a salad with toasted flatbread, tangy sumac and dried mint. On the side is a delicious herbed yogurt, smooth, smoky baba ganoush, and za'atar (a blend of thyme, sumac and sesame seeds) which is delicious on pitta breads dipped in olive oil.

  • 800g diced chicken (thighs are best)
  • 500g lamb or beef mince
  • 3 large aubergines
  • 3 green peppers
  • 2 small onions
  • 2 cloves of garlic
  • 2 little gem lettuce
  • ½ cucumber
  • 400g cherry tomatoes
  • 200g radishes
  • 50g bunch of flat leaf parsley
  • 1 lemon
  • 300g natural yogurt (Greek is best)
  • 100g feta cheese (optional)
  • 240ml good quality olive oil plus extra to serve
  • 8 pitta breads
