Tonka Bean Panna Cotta
Tonka beans are the seeds of a rainforest tree which is native to South America - they look a little bit like a large, hardened raisin with a light brown interior. They’ve got a lovely sweet aroma reminiscent of vanilla and cinnamon and are said by some to have aphrodisiac qualities…so just the thing to flavour this decadent and creamy panna cotta which is perfect for a Valentine’s day dessert!

Ingredients
- 200ml double cream
- 75ml full fat milk
- 1 leaf of gelatine or ½ a sachet of vege-gel
- 50g sugar
- Grated dark chocolate to serve

Method
- Roughly chop the TONKA BEANS
- If using gelatine...Bring the cream, milk, sugar and TONKA BEANS to a gentle simmer for around 10 minutes
- Soak the gelatine leaf in cold water
- Remove the cream mixture from the heat, squeeze the gelatine leaf dry then stir into the cream mixture until completely dissolved
- Strain the mixture (discarding the TONKA BEANS) then divide between 2 ramekins and chill in the fridge for 2 hours or just until set but with a slight wobble
- If using vege-gel...Place the cream, milk, sugar and TONKA BEANS in a small pan. Whisk in the vege-gel then warm the mixture to boiling point
- Quickly strain the mixture (discarding the TONKA BEANS) then divide between 2 ramekins and chill in the fridge for 1 hour or until set but with a slight wobble
- Serve straight from the fridge topped with grated dark chocolate
