Butter chicken is a more sophisticated version of the ever popular chicken tikka masala - it has its origins in Punjab in the north of India and consists of chicken marinated in spiced yogurt, then cooked in a sauce rich with butter, tomato and spices including methi (fenugreek) leaves. The fenugreek gives a particular ‘curry’ flavour, with a really sweet, pungent scent that’s very recognisable.

Kottu translates from Sinhalese as chopped, and this hugely popular Sri Lankan street food consists of chopped up roti (a type of flatbread), stir-fried with chicken, vegetables and egg. It’s typically cooked on a heated iron sheet using two blunt blades to mix and chop - a distinctive sound which can be heard everywhere in Sri Lanka!

  • 300g diced chicken (thighs are best) or use paneer cheese cut into bite-size pieces for a veg version
  • 1 clove of garlic
  • 3 tomatoes
  • ½ cucumber
  • ½ lemon
  • 50g butter
  • 150g natural yogurt (full fat is best)
  • 1 tbsp tomato puree
  • 125g plain flour (plus extra for rolling)
  • 1 tsp sugar
  • Rice to serve

Kottu Roti with Lunu Miris:

  • 300g diced chicken (thighs are best) or use paneer cheese cut into bite-size pieces for a veg version
  • 1 large carrot
  • 1 small red onion
  • 2 cloves of garlic
  • ½ cucumber
  • 1 lemon
  • 2 eggs (any size)
  • 2 tsp tomato puree
  • 2 tsp soy sauce (any type)
  • 2 chapatis, pitta breads or tortilla wraps

Really delicious u can’t really taste the spices but it’s not hot, I could eat 2 portions it’s so nice
