Bhuna is a highly spiced yet quite mild curry with lots of character and a bit of tang from the use of tamarind in the sauce. The name describes the cooking technique of first frying the onions, garlic and spices in hot oil to form a dark, brown paste, the meat is then slow-cooked in the spice paste and its own juices which results in an intensely-flavoured, thick sauce coating the tender meat.

In Mexico ‘mole’ (pronounced mo-lay) is the name for a sauce made predominantly of chillies and a range of other ingredients including spices, dried fruit, nuts, seeds and sometimes even chocolate. This mole contains ancho and pasilla chilli, toasted sesame, dried figs, cinnamon, cumin and allspice to create a delicious deeply-flavoured sauce that goes fantastically well with grilled courgettes.

  • 250g diced chicken (thighs are best)
  • 1 medium red onion 
  • 1 clove of garlic 
  • 1 green chilli (optional) 
  • 4 tomatoes
  • ½ lemon
  • 150g full fat natural yogurt (not Greek yogurt or set yogurt)
  • Rice for 2 to serve

 

Courgette Mole

  • 2 medium courgettes 
  • 6 tomatoes 
  • 1 medium red onion 
  • 4 cloves of garlic
  • ½ lime
  • 10g bunch of coriander 
  • Sour cream or crumbled feta cheese to serve
  • 50g dried figs or raisins
  • Rice for 2 to serve

Chicken bhuna with extra veg, this included courgettes , green beans and red pepper. Enjoyed by all the family!
