Salt & pepper chips are a favourite addition to any Chinese takeaway order, and now it's really easy to make your own at home! The spicy toasted seasoning uses lots of Sichuan pepper and star anise for fragrance, as well as a pinch of white pepper and chilli which really lifts the flavour, plus fresh onion, garlic and pepper which adds a lovely texture and colour.
CHINESE SALT & PEPPER BLEND (1 portion = 2 tsp): salt, chilli, paprika, star anise, ginger, fennel, white pepper, cubeb pepper, coriander, CELERY, MUSTARD, black pepper, Sichuan pepper, cumin

Chinese Salt & Pepper Chips Recipe
You Need:
- 1kg potatoes (any type) - cut into thick chips
- 1 small onion - cut into bite-size pieces
- ½ a bunch of spring onions - thinly sliced
- 3 cloves of garlic - finely chopped
- 1 pepper (any colour) - cut into bite-size pieces
- Sweet & sour sauce to dip, or serve the chips on the side of any main course!
Method:
- Preheat the oven or airfryer to 200°C/gas mark 6
- Toast the CHINESE SALT & PEPPER BLEND in a dry pan, stirring continuously, for 2 minutes or until the mix just starts to smoke and is slightly darker in colour. Leave to one side
- Mix the chips with 3 tbsp oil and a pinch of salt
- Bake or air-fry the chips (on a parchment-lined tray if using the oven), turning regularly, for 40 minutes or until they start to turn golden-brown and crispy
- Stir in the onion, pepper and 2 tbsp oil then bake or air-fry, stirring occasionally, for 20 minutes or until the onion and pepper are soft
- Stir in the spring onions, garlic and toasted CHINESE SALT & PEPPER BLEND and toss together until everything is evenly coated

This recipe is lovely! The chips are tasty and crispy, well seasoned and morish. I suggest cutting the pepper in similar size. The recipe asks for chopped garlic sprinkled over the potatoes towards the end of the cooking process which smells lovely. A solid side dish!
