This month’s main dish is lamb dopiaza. The word dopiaza roughly translates as ‘double onions’ and refers to the onions being cooked in two ways. In this case some are caramelised with the lamb and the remaining are used to form the sauce which is also flavoured with cardamon, cinnamon and cloves. The sweet and savoury dopiaza is offset by a hot and tangy green chilli raita containing mint and fresh coriander. It’s also served with pilau rice, brinjal bhaji (a stewed aubergine dish) and a buttery makhani dhal made from black lentils and finished with a tempering of garlic, mustard and cumin.
