Goa, a small coastal state in the west of India, was until relatively recently still ruled by the Portuguese - who were responsible for introducing chillies to India. India is now the largest consumer of chillies, and the Goans have a particular fondness for the spicy fruit.

This curry has its origins as a pickle and our pork version is served with a sweet and mild coconut curry called caldine, made rich with poppy seeds and sour with tamarind. On the side there’s lovely little coconut pancakes, a bright green chutney, refreshing cucumber salad and aromatic rice.

WHOLE CHILLIES.
CURRY GROUND SPICES: Chilli powder, paprika, cumin, cloves, cinnamon, fennel, black pepper, garlic, ginger, shrimp powder (shrimp, salt)
PORK MARINADE: Turmeric, black pepper
RICE SPICES: Cassia leaves
GREEN CHUTNEY BLEND: Coriander leaf, mint, green cardamon, green chilli
CALDINE GROUND SPICES: Cumin, black pepper, coriander, turmeric, cinnamon, tamarind (tamarind, starch), curry leaves, white poppy
PANCAKE SPICES: Kashmiri chilli, toasted cumin, black pepper, fennel, coriander leaf, ajowan

  • 800g diced pork (pork belly is best!)
  • 2 large red onions
  • 5 cloves of garlic
  • Fresh ginger - finely chopped to make 2 tbsp
  • 1 medium cauliflower
  • ½ cucumber
  • 100g green beans  OR peas (fresh or frozen)
  • 20g bunch of coriander
  • 200ml tin of coconut milk
  • 80ml vinegar (white wine vinegar or cider vinegar is best)
  • 40g desiccated coconut
  • 300g basmati or standard long grain rice (not easy cook)
  • 100g plain flour or gluten-free alternative
  • 1 tsp sugar
  • 1 tsp dried yeast (½ a standard-size sachet)

Goan Pork Balchão with coconut and ginger dhal. This one was one of the recipes from the new Chefs Specials book, very very tasty, loving the new book!!

Yum - that curry looks perfect, and the crispy ginger and coconut topping on the dhal looks incredible! We're really happy to hear how much you're loving the new book so far!
