Goa, a small coastal state in the west of India, was until relatively recently still ruled by the Portuguese - who were responsible for introducing chillies to India. India is now the largest consumer of chillies, and the Goans have a particular fondness for the spicy fruit. This curry is based on pork curries from the region (of which the infamous vindaloo is one) and often would be made a few days in advance to allow the flavours to develop.

Balinese cooking draws influence from across Southeast Asia with the use of fragrant ingredients such as ginger, Kaffir lime and lemongrass. Here we’ve got a sumptuous sticky glazed chicken with chilli sambal and rojak – a pineapple and cucumber dressed with tangy tamarind sauce.

Balinese Chicken

SAMBAL SPICES: Chilli, shrimp powder (shrimp, starch), galangal

CHICKEN SPICES: Chilli, turmeric, black pepper, ginger, toasted coriander, toasted cumin, garlic, onion

TAMARIND SAUCE SPICES: Tamarind (tamarind, starch), amchur, ginger, galangal

Goan Pork Curry

  • 400g diced pork (pork belly is best!)
  • 1 large red onion 
  • 3 cloves of garlic 
  • 2 tomatoes 
  • 10g bunch of coriander 
  • 40ml vinegar (white wine vinegar or cider vinegar is best)
  • ½ tsp sugar
  • 150g basmati rice or standard long grain (not easy cook)
  • 20g desiccated coconut

Balinese Chicken

  • 2 chicken legs or large chicken thighs
  • ½ cucumber 
  • ½ bunch of spring onions
  • ¼ small ripe pineapple 100g ready prepared pineapple
  • 2 tbsp sugar
  • 25g peanuts (roasted and salted are fine)
  • Rice for 2 to serve
