Green Chile Stew Blend

This simple stew is from New Mexico, where the fertile land by the Rio Grande river combines with the sunny climate to help grow their world-famous chillies! We're using a bit of New Mexican Hatch green chile powder in this spice blend, as well as a few dried herbs and a pinch of ground cumin and allspice for extra fragrance. Make this recipe with green peppers if you like a mild flavour, or use up to 6 fresh green chillies if you like it spicy!

Green Chile Stew Recipe
You Need:
- 500g diced pork, or use tinned jackfruit in water for a veg version - drained
- 250g floury potatoes - peeled and cut into large bite-size pieces
- 1 onion - finely chopped
- 4 cloves of garlic - roughly chopped
- 6 green chillies (seeds removed) or use 2 green peppers for a milder flavour - roughly chopped
- 15g bunch of coriander - roughly chopped
- 1 lime
- 1 tbsp plain flour
- Rice, salad and sour cream to serve
Method:
- Fry the pork in 2 tbsp oil over a high heat, stirring occasionally, for 5 minutes or until golden-brown on all sides. Remove and leave to one side, reserving the pan and oil for the next step
- Turn the heat down slightly and add an extra 1 tbsp of oil if necessary, then fry the onion, stirring regularly, for 10 minutes or until soft and translucent
- Blend the garlic, chillies, coriander, flour, 300ml water, GREEN CHILE STEW BLEND and 1 tsp salt to a smoothish sauce
- Add the fried pork and the blended sauce to the pan then cover and simmer, stirring occasionally, for 30 minutes or until the pork is just tender
- Add the potatoes then cover and cook, stirring occasionally and adding an extra splash of water if necessary, for 30 minutes or until the potatoes are tender and the sauce is rich and thick
- Stir in the juice of ½ the lime and serve with the remaining ½ lime to squeeze over at the table

My family loved this. I used some fatty pork steaks which gave great flavour. I've also purchased 3 more packs.
It's January 2025, my Spicery order arrived promptly. Within, was the latest free spice sample. Hmmm, green Chile stew. If past samples are anything to go by then this will be good. I was a little strapped for time so I didn't pre-fry the pork. Otherwise I put the stew together as directed, got the pot nice and hot, put it into the slow oven and walked away for 7 hours. Oh btw, as slow cooking I didn't add flour at this stage, I did it before serving. Drum roll ...... yet another triumphant meal. In fact so good, I've signed in to order 3 sachets and give my review. I used 3 whole chilli which gave a nice little kick to the sauce.
