Green peppercorns come from the same tree as black peppercorns, but are picked slightly earlier before they fully ripen. This results in a lighter flavour that still packs a peppery punch! Green peppercorns are used extensively in Thai and Vietnamese cuisines, and are best used in dishes with a short cooking time so their delicate flavour isn’t overwhelmed.

USES: Use these whole or crushed in salad dressings, potato salads and pastas. Their delicate flavour is better suited to lighter dishes like chicken or fish.
