A kathi roll (also known as a kati roll, egg roll or Frankie) consists of a delicious homemade paratha on which a thin omelette is cooked and then the whole thing filled with a combination of fragrant marinated chicken, salad, chutney and Kashmiri chilli raita all rolled up like a large fajita. To turn this succulent street food special into a substantial meal we’ve also got some delicious garam masala chips on the side. For dessert is another Indian street food, India’s answer to ice cream - kulfi - and this delightfully rich and sweet mango version is flavoured with saffron, green cardamon and rose.

  • 500g diced chicken (thighs are best)
  • 1kg floury potatoes
  • 1 red onion
  • Fresh ginger
  • 25g bunch of coriander
  • 3 tomatoes
  • ½ cucumber
  • 1 large mango (or 300g ready-prepared)
  • 3 lemons
  • 350g natural yogurt (full fat is best)
  • 3 eggs (any size)
  • 397g condensed milk
  • 70g pistachio nuts or flaked almonds
  • 42g sugar
  • 400g plain flour or bread flour (plus extra for rolling)

No photo as the family piled in distracted by the delicious aromas! We found making the parathas a bit fiddly but the Kulfi was very popular. Could the sachet be available as a standalone ditto the fresh mango chutney - we have made that before and it is so much nicer than 'bought' and very little effort to make.

When it disappears before you even get a chance to take a photo, you know it was a good! I'm afraid we don't sell any of the component parts of our spiceboxes as individual sachets, but we would suggest looking at the 'make it again' section on the right-hand side of your recipe card. This will tell you how to recreate a simplified version of each spice blend yourself using everyday herbs and spices!

Super tasty. Loved the parathas and the spicy raita was very nice. Have yet to try the garam masala chips, decided to do them later. The mango kulfi was exceptional, will definitely repeat!
