Jamaican Curry Chicken:
This month, our first meal is a curry dish from the island of Jamaica. Jamaican cooking demonstrates fusion food at its very best - combining the use of Indian spices, European herbs, indigenous ingredients and African cooking techniques. The result is a cuisine that’s hearty, robust and full of flavour! Served with rice & peas, a simple salad and a fiery hot pepper sauce, it’s the perfect meal for livening up a dreary day.

Hungarian Paprikas:
Our second meal is paprikas - a simple stew of diced meat given a magical lift with famously rich Hungarian paprika. The best Hungarian paprika provides a sweet depth of flavour and colour, brought about by ripening in the hot sun in the sandy soil of southern Hungary. It’s served here with some simple herbed potatoes and cucumber pickle.

  • Jamaican Curry Chicken:
  • 300g diced chicken (thighs are best) or butternut squash for a veg version
  • 1 bunch of spring onions
  • 1 pepper (any colour)
  • 2 cloves of garlic
  • 1 lime
  • 150g standard long grain or basmati rice
  • 1 tbsp tomato puree
  • 1 tbsp sugar
  • 200g tin of kidney beans or gungo peas (½ a standard-size tin)
  • Salad or coleslaw to serve
  • Hungarian Paprikas:
  • 300g diced chicken (thighs are best) or button mushrooms for a veg version
  • 1 pepper (any colour)
  • 1 red onion
  • 2 cloves of garlic
  • 500g new potatoes
  • ½ cucumber
  • 50ml crème fraîche or sour cream
  • 15g butter
  • 25ml vinegar (white wine or cider vinegar is best)
  • 1 tbsp sugar

The meal was top class. We loved the hot sauce. It was fiery on it’s own but brilliant when mixed in.
