Over 90% of the population is Muslim so chicken and seafood are widely eaten there, with rice, corn and coconut being grown around the island. Here we have a rich chicken curry flavoured with turmeric, cassia and lemongrass served with crispy corn (jagung) fritters. There are over 300 varieties of sambal in Indonesia - no meal would be complete without the spicy condiment! - so on the side we've got a version called sambal bajak along with a popular Javanese salad known as urap sayur.

  • 500g diced chicken (thighs are best) or use meat-free chicken style pieces for a veg version
  • 100g cooked, peeled prawns (any type)
  • 500g new potatoes
  • 200g green beans
  • 150g beansprouts
  • ½ cucumber
  • 2 tomatoes
  • 200g shallots or 1 large red onion
  • 4 cloves of garlic
  • Fresh ginger
  • 1 lime
  • 2 eggs (any size)
  • 198g tin of sweetcorn
  • 70g cornflour
  • 1 tbsp sugar
  • 20g desiccated coconut
  • 400ml coconut milk (full fat is best)
  • 300g basmati or long grain rice
  • Oil for frying (sunflower or vegetable oil is best)

Paused just long enough to take a picture! A lovely mixture of flavours and textures and can't go wrong with a prawn fritter starter.

Absolutely delicious, took me nearly 3 hours from start to finish but well worth it! All the flavours compliment each other so well. The family loved it and everyone had seconds!

Delicious spiced chicken with tangy Sambal Bajak on the side. A little fiddly to make, but we'll worth the effort. Would definitely make again!

We live in Florida and have just had our second Spicery meal. The temperature outside may be in the 90s but we really enjoyed the Javanese chicken curry especially the sambul. We can’t get all these spices over here and it so reminded us of our 2 months in Indonesia 30 years ago! Thank you! Jay and Dan

Delicious meal with good range of accompanying dishes of various heats. Recipe card was straightforward and easy to follow, although preparation timings were optimistic. Suggest that fresh ingredients are prepped and ready to cook exactly when needed. Also, there was a lot of washing up................... Looking forward to my next curry adventure!

Wow! We love making curries at home and have made hundreds over the years...this was by far the BEST we’ve ever tasted. The prawns (bakwan jagung) were out of this world as was the curry itself. The flavours from the sambal bajak took us right back to our holiday in Lombok a few years back. Can’t wait to try the next box! *****

Wow this was a great curry but have to say the stand out was the Bakwan Jagung. Oh my corn fritters with prawns in, never have I cooked something like this before so to learn a new technique and with amazingly tasty results a double win.
