Curry rice was introduced to Korea by the Japanese who ruled there between 1910 and 1945 before Korea gained independence. In turn, curry did not exist in Japan until the British invented curry powder during their occupation of India in order to standardise and distribute India's huge variety of exotic dried spices throughout the world. Like Japanese curry, the Korean version is usually made with a ready made curry roux - a combination of butter, flour and spices - to produce a thick glossy sauce. Our version here is served with sticky rice, a quick version of kimchi (the ubiquitous fermented cabbage dish) pickled radishes and chilli sauce.

Shopping List500g diced chicken (thighs are best)
1 bunch of spring onions
1 medium onion
Fresh ginger
2 cloves of garlic
1 medium Chinese cabbage
2 medium carrots
300g potatoes (any type)
100g radishes
30g butter
50g sugar
95ml vinegar (rice, white wine or cider vinegar is best)
2 tbsp soy sauce (any type)
2 tbsp plain flour
300g Japanese sushi rice

The curry and spicy sauce were lovely. The radishes tasted much better the following day so I'd recommend making these the day before. The kimchi wasn't great - could be down to using a savoy cabbage as we couldn't get hold of a Chinese one. Maybe should have used half a cabbage to get more flavour from the spice packet. I added extra vinegar which improved it a bit. Overall a decent meal!

Ah yes, savoy could be a bit thick perhaps - but great job improvising … that's what this strange time is all about!

Really enjoyed this. We switched tofu in for the chicken which made it into a great vegan meal (used fake butter as well). The curry was really tasty and the kimchi was surprisingly good too!.

Loved this. After a great first delivery last month I was preparing myself for a disappointment but, if anything, this was even better than the Xacutti. Again it was easy to follow and very tasty results. Will definitely being doing the curry, Kimchi and the pickled radishes again. The only down side was the chilli sauce which I think would have been excellent were it not for the oil dosage - a tablespoon was too much and got in the way of the flavours a bit

Kicked of my 3 month subscription for fathers day with this tasty Korean curry...… big thumbs up from all the family..... instructions were easy to follow apart from making the Kimichi, info on this was a bit scarce although google helped me.. sourcing a Chinese cabbage was a no no.. looking forward to next months

I love cooking! My favourite thing to cook is curries, all the smells, textures, colours and tastes are amazing; a true treat on the senses. My mother-in-law and father-in-law baught me this as a birthday present (Thank you again so much!) and I got all the ingredients etc to make it tonight. The cooking instructions were very clear and easy to follow (I even had time to clean and wash up as I went!) The final result was out of this world. I can't believe I had cooked it myself. It was a really tasty curry and introduced some new tasting experiences such as kimchi. I can't wait for the next curry!

Great recipe! We swapped out the chicken for paneer as we don't eat meat and it was delicious, the kimchi was very tasty and surprisingly simple. Honestly can't think of anything we didn't like about it. We will definitely be using the recipe again.

The flavours are absolutely stunning - we swapped out regular potatoes for sweet potatoes on a whim and it still tasted amazing - well worth the effort to cook!
