Ardabil is one of the most picturesque regions in Iran, with a melting pot of culinary influences from Azerbaijan, Turkey and Iran. Sule, our guest chef from the area who cooked with us through our connection with Bristol Refugee Rights, presented some of her favourite dishes from Ardabil that have become popular across Iran. One of them, which we're serving here as our starter, is ghotab - fried, filled pastries, perfect with a fiery coriander chutney. She also cooked us dolme (stuffed vegetables) along with decadent saffron rice, a sweet and sour yogurt sauce and a refreshing Shirazi salad. A proper Iranian feast!

  • 300g lamb, beef or veggie mince
  • 6 tomatoes
  • 2 onions
  • 20g bunch of coriander
  • 2 large peppers (any colour)
  • 1 cucumber
  • 1 lemon
  • 2 egg yolks
  • 200g feta cheese
  • 150g natural yogurt (full fat is best)
  • 20g butter
  • Oil for frying (sunflower or vegetable oil is best)
  • 2 tbsp tomato puree
  • 60g raisins or sultanas
  • 120g self-raising flour (plus extra for rolling)
  • 350g basmati or long grain rice

This recipe was so easy to follow. The only thing I did differently, I substituted the lamb for Turkey mince. The flavours were delicious and as the recipe was for 4 with only 2 eating, I had plenty left for lunches for a couple of days. Delicious.

Great to hear that this dish worked a treat with turkey mince instead of lamb. It look like a fabulous meal, and we hope you enjoy the leftovers just as much!

Totally transported with this Iranian meal, it was so enjoyable cooking something completely different and the ghotab pastries were particularly delicious- definitely will be making those again!

We lived in Iran for three years back when our two teenagers were babies, so it was a delight to share with them the delicate Persian flavours in this dish. The ghotab were a bit scary, I wasn’t sure it would work and while they were not particularly uniform, I was amazed they turned out so well and tasted amazing. All the little chutneys and sauces make the difference between yum and wow.

It all looks delicious, Melissa - and how lovely for you to be able to share those memories with your kids! Great job with the ghotab, no need for neatness as long as they taste great! Happy spicing!
