The obligatory side dishes to the masala dosa are sambar, a vegetable and lentil dish and a couple of chutneys!
Dosa are a type of South Indian pancake - they’re traditionally made from a rice and lentil batter that’s fermented overnight, but our much quicker version using wheat and rice flour is no less delicious! Hundreds of different versions of the dosa exist but perhaps the most famous is the masala dosa where spicy potato curry is stuffed inside the pancake and folded to seal. The obligatory side dishes to the masala dosa are sambar, a vegetable and lentil dish that's somewhere between a soup and a dhal, along with a couple of chutneys - in this case a fiery tomato chutney and a cooling coconut chutney.

500g floury potatoes
1 large onion
300g mixed veg (eg squash, carrots, green beans, cauliflower etc (fresh or frozen))
3 cloves of garlic
25g bunch of coriander
30g desiccated coconut
2 ½ tsp sugar
1 tsp dried yeast (½ a standard-size sachet)
1 tbsp vinegar (white wine or cider vinegar is best)
100g plain flour or gluten-free alternative
50g rice flour
80g red lentils
