Massaman curry contains a huge variety of different spices but - like most food in Thailand - it has a lovely balance so that nothing overwhelms. It’s an unusual curry by Thai standards as it uses several dried spices in addition to the traditional fragrant Thai ingredients of lime leaves, lemongrass and galangal.

It’s served here with son-in-law eggs - a dish of fried hard boiled eggs dressed with tangy tamarind sauce, fried shallots and fresh coriander - a hot chilli relish, stir-fried vegetables, a refreshing cucumber salad and plain rice.

CURRY SPICES:  Toasted coriander, tamarind (tamarind, starch), toasted cumin, white pepper, cloves, mace, cassia, chilli, green cardamon, galangal, lemongrass, lime leaf, black cardamon, shrimp powder (shrimp, salt)
WHOLE SPICES: Cassia, lime leaf, lemongrass
NAM PRIK SPICES: Red pepper, toasted chilli flakes, white pepper, shrimp powder (shrimp,starch), garlic, onion, coriander
TAMARIND SAUCE SPICES: Tamarind (tamarind, starch), amchur, garlic, galangal, Kashmiri chilli, smoked paprika
SALAD SPICES: Chilli, ginger, garlic, amchur
PAK CHOI BLEND: Ginger, garlic, coriander

  • 500g diced stewing beef
  • 400g shallots
  • 500g new potatoes
  • 4 cloves of garlic -
  • Fresh ginger - roughly chopped to make 1 tbsp
  • 1 fresh red chilli
  • 1 cucumber
  • 2 pak choi or ½ Chinese leaf cabbage
  • 10g bunch of coriander
  • 2 limes
  • 4 eggs
  • 400ml tin full-fat coconut milk
  • Rice for 4 to serve
  • 70g peanuts (roasted and salted are fine)
  • 65g sugar
  • 60ml fish sauce
  • Oil for frying (vegetable oil or sunflower oil is best)
