Mauritius has been inhabited by people from all over the world - including the British, French, Africans, Chinese and Indians - producing a ‘Creole’ cuisine that’s a fantastic mixture of all these influences. Here we have a perfect example with daube - a chicken curry served with a chilli and lemon sauce known as mazavaroo.

Balkan Gulas:
Gulas (also known as goulash) is always made with Hungarian paprika which gives a fantastic rich colour and delicious, sweet depth of flavour. It feels like just the right ingredient for dinner on a cold winter’s night - especially with pickles and pasta or potatoes as here!

Gulas Ground Spices: hot Hungarian paprika, bay, caraway, chives, marjoram, black pepper
Sweet Paprika: sweet Hungarian paprika, smoked paprika
Pickle Spices: dill seed, dill leaf, yellow MUSTARD, garlic

Shopping List

Mauritian Daube:

  • 300g diced chicken (thighs are best)
  • 150g potatoes (any type)
  • 1 onion
  • 2 cloves of garlic
  • Fresh ginger
  • 2 tomatoes
  • ½ lemon
  • 10g bunch of coriander
  • Rice to serve

 

Balkan Gulas:

  • 300g diced beef or pork
  • 1 small onion
  • 1 clove of garlic
  • 1 red pepper
  • ½ cucumber
  • 100g sour cream
  • 100ml vinegar (white wine or cider vinegar is best)
  • 1 tsp sugar
  • Rice or potatoes to serve

Would agree with previous reviewer. Compared to usual amazing complexity of flavour with spicery kits, on this occasion we found the Gulas in particular really underwhelming. Got none of the warmth of the paprika, and felt a very simple, watered down version of an authentic flavour. A rare disappointment from Spicery.

Followed the instructions for both these recipes. With neither did I get a 'thick rich sauce' - both were very watery. Gulas marginally better than the daube. Disappointing
