Adobo is Spanish for sauce or marinade, and in Mexico an adobo usually contains a mixture of chillies, spices and vinegar. This version of chicken adobo is one of the simplest and speediest taco fillings you can make!

MEXICAN ADOBO BLEND (1 portion = 1 tbsp): paprika, ancho chilli, cumin, chipotle chilli, smoked paprika, cinnamon, allspice, pasilla chilli, Mexican oregano, guajillo chilli, coriander leaf
May contain traces of celery, mustard and sesame
PREP 5 mins
COOK 20 mins
HEAT 3
Serves 4
You Need:
500g diced chicken (thighs are best) or 2 peppers and 1 medium red onion for a veg/vegan version - cut into bite-size pieces
1 tbsp vinegar (white wine or cider vinegar is best)
1 tbsp tomato puree
Tortillas or wraps and your choice of sour cream, grated cheese, refried beans, salsa and guacamole to serve
1 portion of MEXICAN ADOBO BLEND
Method:
Mix the chicken with the vinegar, tomato puree, MEXICAN ADOBO BLEND and ½ tsp salt. Leave to marinate for at least 5 minutes
Fry the chicken (including all its marinade) in 2 tbsp oil for 15 minutes or until any liquid has evaporated, the chicken is cooked through and beginning to brown around the edges
Serve the chicken adobo with tortillas and your choice of sour cream, grated cheese, refried beans, salsa and guacamole

This was super tasty. We made up the blend with half the amount of chicken with some onion and pepper. I made some rice to go with it and served it with grated cheese wrapped up in homemade flatbreads (I used the chapati recipe from my curry legends cook book with a bit of paprika and cumin mixed in). 15 mins cooking for an awesome dinner. If all the taco legend dinners are going to be like this it is going to be a brilliant kit. I am excited in anticipation.
Lovely Mexican adobo blend. Can't wait for the new book in June. Accompanied with homemade salsa and citrus mayo cos I had no sour cream, and herby sautéed potatoes. 5/5.

I got this as a free sample with my curry legend spice blends order. I used this to make a side dish of potatoes to go with our usual chilli - The Spicery blend is so smoky and tasty! It made a fantastic side. I ordered the Taco Legend kit as soon as it was possible to do so and I cannot wait. I agree with the other reviewers: if this mix is a sign of what is to come, it will absolutely be as good as Curry Legend.

With a huge crate of mushrooms, there had to be something different and these 2 Free Samples were the answer. Added some tomatoes and ham and there was filling for all the tortillas we could find. Guacomole on the side!!! Tasteeeee
YUM! There is so 'mushroom' for us to get hungry just looking at this, looks like a fantastic fajita feast!
