Tlayudas, Mexico’s answer to pizza…
Mexican flavours go fantastically well with grilled veg so we’re starting our meal with elote – irresistible barbecued corn slathered in rich, tangy cheese and slightly smoky chilli flakes. For the main we’ve got Mexico’s version of pizza, tlayudas. Originating from the mountainous region of Oaxaca (pronounced Wa-haka), they have become hugely popular across Mexico.
Using crisped flour tortillas as a base, our tlayudas are topped with habanero pickled onions, charred salsa and a delicious deeply-flavoured mole sauce that’s perfect with the grilled courgette.
