Mexican Elote ~ Yellow Mole
Description | Mexican flavours go really well with charred veg so we’re starting this meal with elote – grilled corn on the cob covered in rich cheese topping enlivened with smoky chilli flakes. For the main we’ve got yellow mole (pronounced mo-lay). Mole, meaning ‘sauce’, is one of the most iconic dishes of Mexico, particularly in Oaxaca, and this yellow variety is one of the region's 7 classic moles. Fresh chillies are combined with aromatic spices, annatto and Mexican oregano for a deep, warm flavour. The mole tops homemade tortillas piled with grilled courgette, refried beans and smoky charred veg salsa. On the side we’ve vivid pink pickled onions made with habanero chilli, and some cooling sour cream. |
